Fleishers Craft Butchery, a fixture in the national butchery scene, officially opened its Upper East Side shop on Friday August 5th. The shop is a callback to New York's post-war past, when shops dotted Manhattan and consumers walked in to select their preferred cuts of beef, a time before meat was bought pre-cut at supermarkets.
At Fleishers, dressed meat (pre-butchered animals) can be viewed through a glass window and employees work on a butcher block just behind display cases, allowing customers to see exactly how their meat is prepared.
The 1,000-square-foot Manhattan shop, down the street from a Citarella Gourmet Market, will offer pasture-raised beef, pork and lamb, as well as poultry sourced from farms upstate.
